To get that perfect “bubble tea shop” flavor without bitterness, follow this ratio:
- Water Temperature: 80°C. Do not use boiling water (100°C) or the tea will become bitter and dry.
- Ratio: 1g tea to 40ml water (e.g., 50g tea for 2 Liters of water).
- Steep Time: 7–8 minutes.
- The Chill: After steeping, strain the leaves and immediately mix the tea with 1kg of ice to “shock” it. This locks in the floral aroma and keeps the tea clear.
