Brewing Guide for Lee Cha (Bulk Prep)

To get that perfect “bubble tea shop” flavor without bitterness, follow this ratio:

  1. Water Temperature: 80°C. Do not use boiling water (100°C) or the tea will become bitter and dry.
  2. Ratio: 1g tea to 40ml water (e.g., 50g tea for 2 Liters of water).
  3. Steep Time: 7–8 minutes.
  4. The Chill: After steeping, strain the leaves and immediately mix the tea with 1kg of ice to “shock” it. This locks in the floral aroma and keeps the tea clear.

  • Scent Check: If the tea doesn’t smell strongly of flowers when you open the bag, the water might have been too hot last time.
  • Freshness: Brewed tea lasts 4 hours at room temperature. After that, the floral notes fade.
